Pecan Crusted Chicken Tenders Recipe

 Like Chicken Fingers?  Here’s a recipe for a much healthier version.  Now you can indulge guilt-free!

Ingredients:

  • Olive oil cooking spray
  • 1 1/3 to 2 pounds of chicken tenders
  • Salt and pepper (freshly ground is best)
  • 1 cup oatmeal, processed in food processor to finely chop
  • 2 eggs (or 4 whites), beaten with a splash of water
  • 1 cup flour
  • 1 cup pecans, finely chopped in food processor
  • 1/2 teaspoon nutmeg (freshly ground or grated is best)
  • 1 orange, zested

Directions:

  1. Heat oven to 400 degrees (F)
  2. Season chicken tenders with salt and pepper
  3. Set out 3 shallow dishes. Place flour in 1 dish, eggs beaten with water (or milk) in 2nd dish, and in the 3rd dish combine bread crumbs with ground pecans, nutmeg, and orange zest.
  4. Coat tenders in flour, then egg, then bread crumb mixture.
  5. Place tenders on a baking sheet.
  6. Spray tenders with olive oil spray.
  7. Bake tenders for 15-20 minutes (until cooked throughly).
