Like Chicken Fingers? Here’s a recipe for a much healthier version. Now you can indulge guilt-free!
Ingredients:
- Olive oil cooking spray
- 1 1/3 to 2 pounds of chicken tenders
- Salt and pepper (freshly ground is best)
- 1 cup oatmeal, processed in food processor to finely chop
- 2 eggs (or 4 whites), beaten with a splash of water
- 1 cup flour
- 1 cup pecans, finely chopped in food processor
- 1/2 teaspoon nutmeg (freshly ground or grated is best)
- 1 orange, zested
Directions:
- Heat oven to 400 degrees (F)
- Season chicken tenders with salt and pepper
- Set out 3 shallow dishes. Place flour in 1 dish, eggs beaten with water (or milk) in 2nd dish, and in the 3rd dish combine bread crumbs with ground pecans, nutmeg, and orange zest.
- Coat tenders in flour, then egg, then bread crumb mixture.
- Place tenders on a baking sheet.
- Spray tenders with olive oil spray.
- Bake tenders for 15-20 minutes (until cooked throughly).
