Weight Watcher’s has a really good Strawberry Pie recipe that’s low in fat, carbs, and overall calories – at least as far as desserts go. If this strawberry pie is not my favorite low-calorie dessert recipe, it’s certainly one of my favorites. In fact, I’m having this tomorrow as part of my Thanksgiving feast.
Ingredients
- 2 cups of water

- 1 package of JELL-O Sugar-Free/Fat-Free Cook & Serve Vanilla Pudding
- 1 package of Sugar-Free/Fat-Free Strawberry JELL-O Gelatin
- 1 pint of strawberries (or more as desired)
- Fat-free Cool Whip (optional)
Directions
- Bring water and JELL-O pudding mix to a boil. Take it off the stove and add package of JELL-O gelatin.

- Stir thoroughly and let cool.
- Clean and slice the fresh strawberries.
- Line pie plate with strawberries as the “crust”
- Pour the pudding/jello combination on top of the strawberries.
- Let chill for about one hour.
- Dollop fat-free cool whip on the top as desired (keep in mind that it adds calories – from carbs).
Options
Although I haven’t tried it, some people say that using 1 cup of skim milk and 1 cup of water (as opposed to 2 c water) makes the dessert a bit better by making it a tad creamier and a bit less sweet.
You can also add this on top of a graham cracker crust that you make or buy, just make sure it’s a low-fat version. And do keep in mind that the carb and calorie (and probably fat) content is going to be significantly higher using a crust.

PS Let me clarify that I’m not at all a fan of aspartame (brand name NutraSweet), which is used in the pudding and gelatin, but I feel that, like just about anything else, consuming some in moderation is fine. Just do so sparingly. Besides, you should be eating dessert sparingly anyway!
