Pecan Crusted Chicken Tenders Recipe

 Like Chicken Fingers?  Here’s a recipe for a much healthier version.  Now you can indulge guilt-free!

Ingredients:

  • Olive oil cooking spray
  • 1 1/3 to 2 pounds of chicken tenders
  • Salt and pepper (freshly ground is best)
  • 1 cup oatmeal, processed in food processor to finely chop
  • 2 eggs (or 4 whites), beaten with a splash of water
  • 1 cup flour
  • 1 cup pecans, finely chopped in food processor
  • 1/2 teaspoon nutmeg (freshly ground or grated is best)

How to lose 10 pounds…

Just this evening I was asked by a friend how to lose 10 pounds… here’s what I told them.

1) Watch my video The 7 Fundamentals of Fat Loss Nutrition (it’s on youtube and is currently at the top right of the home page.

2) Actually do the advice in the video.

3) Do not eat stuff that you KNOW you shouldn’t eat!  This includes (but is not limited to) Doritos, tiramisu, Ho Ho’s, hamburgers, etc…

4) Break a sweat EVERY day!  Even if just 10 minutes of intense cardio, do something everyday to break a sweat and get your heartrate up.  (If you want some great advice on cardio, check out my Fat Burning, Time Saving Cardio video.)

That’s it.  For 99% of the population, this will help you to lose 10 pounds in no time at all.

Whole Foods Beef Recall!!

I would normally not worry you with a food recall.  However, many readers of DrClay.com shop at Whole Foods Market, so I thought I should share this with you.

Whole Foods has issued a statement that beef purchased from June 2 to August 6 (in select states) should be thrown out due to possible E. Coli contamination.

The contaminated beef has been linked to a large processing plant in Nebraska, so it will ultimately affect far more beef than just that found in Whole Foods.  For example supermarkets like Dorothy Lane and Kroger may be affected.

Whole Foods says that no beef found in their stores now came from the Nebraska plant in question. 

Tips for not getting E. coli: you can dramatically reduce your chance of getting food poisoning from E. coli by thoroughly cooking your beef and by not reusing (prior to washing) anything that has come in countact with the raw beef.  For example, don’t put raw beef on a plate and then use the same plate for the cooked beef.
